I am a huge fan of any meals that include a combination of protein and rice. Here is a quick and easy lunch or dinner recipe I got from the amazing food blogger, @brightmomentco. This took very little prep time and cooking time which is perfect when you’re having a busy day or simply just don’t feel like cooking. I wasn’t sure how the warmth from the rice and beef would pair with the cool pineapple and cucumber, but it was so refreshing. I will definitely make this again in the future.


Ingredients for Pineapple Salsa:
1 Cucumber
1 cup Fresh Pineapple
Green Onion/Scallion
Chopped Fresh Basil
Chopped Fresh Cilantro
1-2 tsp Chili Crisp Oil
2 tbsp each – Honey, Olive Oil, & Apple Cider Vinegar
Instructions:
Brown your ground beef in hot olive oil with fresh ginger and garlic. Next, add honey, low sodium soy sauce, chili crisp oil, and sesame seeds. I didn’t include exact measurements for seasoning, but I’d say season to taste! That’s what makes cooking so fun and enjoyable. Make it your own, experiment, and do what works for you 🙂
